    National Independence Day (Polish: Narodowe Święto Niepodległości) is a public holiday in Poland celebrated every year on 11 November to commemorate the anniversary of Poland's assumption of independent statehood in 1918 after 123 years of partition by Russia, Prussia and Austria.

    November 11 is Independence Day in Poland, but it is also St. Martin's Day celebrated mainly in the Greater Poland and its capital Poznań. St. Martin's Day Croissants – “rogale świętomarcińskie” or simply “marcinki” – are eaten, commonly regarded as local great delicacies. They are crescent-shaped sweetrolls with poppyseed-almond filling. Legend has it that a Poznań baker dreamed of St. Martin riding into town on a white horse. The horse lost one of its golden horse shoes. The baker found it and was inspired make a horse shoe shaped pastry which he gave to the poor. The St. Martin Croissant was born.
