This is an old Polish recipe. It is well known by Polish emigration that made it also a world-famous recipe for most tasty dumplings you have ever tried. If you have a Polish friend, he will gladly learn you how to make Pierogi and you will love it! Now it’s time to get your hands dirty and make this delicious food. These little dumplings are filled with cheese and topped with a simple sauce, yet it’s taste is so complex and nice you will want to make them again, again and again!
For the dough:
1/2 kg flour
about 3 dl lukewarm water
pinch of salt
2-3 cooking potatoes
150g cream cheese
1 tablespoon flour
250 ml of milk
2-3 tablespoons oil
a little salt & pepper
Make a smooth paste of flour, salt, egg and water. Allow dough to rest and in the meantime, make the filling. Boil peeled potatoes in salted water. When finished crushes it into a puree and mix with cream cheese (Who wants to eat pierogi charged only with slightly salted cream cheese but it then takes about 400-500 g).
Stale pastry roll out on a floured surface and remove the dough from the circles the size of 5-6 cm. On each circle put a little stuffing and close the bundle. Put them in boiling water to which you add a little oil for about ten minutes. Boiled pierogi drain and place them on a plate.
Cook the sauce: Heat oil fry finely chopped onion until tender (but if you want the sauce to be stronger and add bacon). Add the flour and fry it a little. Add the warm milk and season with salt and pepper. Cook until desired consistency.
Cooked pierogi beautifully prepared sauce and sprinkle with chopped parsley.
